9 Tips for Making Boxed Pancake Mix Better (with recipe and variations) (1)

Boxed pancake mix is one of my favorite shortcuts in the kitchen. It's quick and easy which is handy since breakfast-for-dinner is on regular rotation in our house.

My favorite brand is Krusteaz - I keep Krusteaz Buttermilk Complete Pancake Mix on hand in my pantry at all times. This isn't sponsored. I just love this mix.

While I think Krusteaz is delicious on its own - without any embellishment - I do love elevating it for an extra special, homemade touch.

9 ways to enhance boxed pancake mix

  1. Use milk (or buttermilk) in place of water.

Most boxed mixes call for water, but substituting milk for water will add richness. Milk will yield a thicker batter, so the amount may need to be adjusted to get the desired consistency. Or try half water, half milk.

  1. Add eggs.

Many boxed mixes are complete mixes, meaning only water is needed. However, even though eggs are not required, you can certainly add one. The egg will add richness and improve the texture of the pancakes.

  1. Add butter.

Butter = flavor, so adding a touch of melted butter to the batter will only add more flavor.

  1. Add spices.

Warm spices such as cinnamon, cloves, cardamom, and nutmeg add a wonderful homemade taste... and they smell good too!

  1. Add extracts.

Extracts are another great way to amp up the flavor. Vanilla and almond extract are my go-to's, but other great options include lemon, orange, or maple extracts.

  1. Add citrus zest.

Lemon, lime, or orange zest - a little goes a long way - is an awesome way to pump up the flavor and give the pancakes a special flair.

  1. Add flavor and texture with add-ins.

Jazz things up with add-ins like chocolate chips, nuts, blueberries, strawberries, bacon, or sprinkles. Get creative and have fun with flavor combinations.

  1. Rest the batter after mixing.

Let the batter sit for 5-10 minutes after mixing. The pancake mix contains leavening (like baking soda) and needs a few minutes to activate and start working. This time also helps all of the flavors to meld together.

  1. Use butter for cooking the pancakes.

Greasing the pan with butter before each batch gives the pancakes a golden brown exterior and more flavor, of course! Be sure to keep the heat set to medium to prevent the butter from burning. If the butter starts to burn, wipe off the griddle and start again by buttering the clean pan.

What does adding an extra egg to pancake mix do? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

What to add to store bought pancake mix to make it taste better? ›

No matter what kind of mix you use, there's no denying that stirring ingredients like blueberries, chocolate chips, peanut butter, and canned pumpkin will make your pancakes feel — and taste — special. You can also top your stack of flapjacks with whipped cream or real maple syrup to disguise unaltered box batter.

Will adding baking powder to pancake mix make them fluffier? ›

Baking soda is essential for baked goods, but baking powder is really what makes pancakes and biscuits rise and become so super fluffy. Double-acting baking powder, which is the kind that you'll find in the grocery store, produces bubbles in two ways: when it is mixed with wet ingredients and then when it gets heated.

The secret is in the egg whites!

To give your pancakes that fluffy text, beat only the egg whites for 3 minutes on medium speed. They'll start turning creamy, which means it's time to add them to the pancake mixture. Use a wooden spatula to incorporate everything. There you have it!

Why do restaurants put pancake batter in eggs? ›

The aeration in the pancake batter makes the eggs light, tender, and fluffy without adding any obvious flavor, so the egg dish is both hefty and light at the same time. Pancake batter also gives the eggs enough body and structure to hold together over the meaty, cheesy fillings.

Flour is your friend

To fix runny batter, just use a sifter to add in flour by the teaspoon. While flour will help thicken the batter, adding too much will result in something akin to elastic dough, which does not make for especially great pancakes.

So, in summary, the more you mix the batter, the more of these gluten clumps unravel and form a chain, making the batter tight, dense and chewy rather than light and fluffy. The second is due to the bicarb soda.

Adding sugar to even a classic pancake recipe is necessary for not just taste but consistency and texture. Even boxed pancake mixes contain some elements of sugar.
