What You Need

  • 1 lb ground beef
  • 1/2 onion, chopped
  • 1 1/2 carrots, chopped
  • 2 stalks celery, chopped ( not shown)
  • 2 (14 ounce) cans diced tomatoes, undrained
  • 1 (8 ounce) can red kidney beans, drained
  • 1 (8 ounce) can white kidney beans, drained
  • 3 (5 ounce) cans beef stock
  • 1 1/2 teaspoons oregano
  • 1 1/2 teaspoons pepper
  • 2 1/2 teaspoons parsley
  • 1 (10 ounce) jar spaghetti sauce
  • 4 ounces pasta

What To Do

Brown beef in a skillet.

Add all ingredients into the crock pot except pasta

Set Crock Pot on low 7-8 hours or high 4-5 hours.

Last 45 minutes add pasta.

    Is the beef stock supposed to be 3x 15oz cans, and not 5oz? I am only ever able to find 15oz cans and bigger. Those cans are the size of regular canned veggies and such.

      I also noticed that your pictured cans of beans are around 15oz. The recipe calls for 8oz cans. Are you just using approximately half of each can?

    I made this for my family of three last night. It was delicious as made. However, it wasn’t very brothy. In fact, it was more like a stew texture. The flavor was great though and though we’ve never actually tried the OG version of this soup, we’re so happy with how this “stew” tastes that we will keep it on the winter warm-up rotation for a while. I would add garlic, a little red wine, and more beef broth next time though. And maybe a little crushed red pepper to kick it up a notch. Food for thought.
