Cinnamon is a spice obtained from the inner bark of trees belonging to the genus Cinnamomum. Chinese Cassia or Chinese Cinnamon
Chinese cassia has its origins in southern China, and is widely cultivated there and elsewhere in South and Southeast Asia. Chinese cassia's flavour is less delicate and its bark is thicker, more difficult to crush, and has a rough texture. Cassia buds are also used as a spice, especially in India, and were once used by the ancient Romans.

Korintje Cinnamon or Indonesian Cinnamon
Korintje Cinnamon is an essential ingredient in international cuisine and is used in recipes like cakes, cookies, pies, chutneys, curries, soups, sauces or teas. It could be best described as having a sharp and subtly sweet flavour with hints of spice and a slightly sour bite.

Saigon Cinnamon or Vietnamese Cinnamon

This is another Cinnamon that has gained in popularity recently. Originated in Vietnam, this cinnamon admittedly makes a good first impression in terms of sheer aroma and taste. It tends to be even more spicy and strong and sweet at the same time. It's a little more expensive than Cassia Cinnamon but has the highest levels of Coumarin, an aromatic organic chemical compound.


Ceylon Cinnamon
Ceylon Cinnamon is native to Sri Lanka and grows best in sandy soil. The tree has a thin bark. The biggest advantage of Ceylon Cinnamon is ultra-low Coumarin levels. Coumarin in high doses causes liver failure, so for people who take Cinnamon daily, Ceylon Cinnamon is the preferred choice.


Malabar Cinnamon

It is native to Sri Lanka and the Western Ghats in India and has a characteristic smell of lemongrass. Malabar Cinnamon has a higher oil content as compared to other varieties, and it is ideal for curry, rice pilaf, and biryani.
