Entertain your guests with a full charcuterie board of duck! A savory combo of our favorite duck preparations, this recipe can be adjusted for any party size. Our crispy duck breast takes center stage on this board along with sides of candied duck bacon, duck skin cracklings, and even an optional duck liver mousse. Perfect to pair with your favorite jams, cheeses, and wine.

Directions

Candied Duck Bacon OR use Smoked Maple Duck Bacon

    Preheat oven to 375°F. Line baking sheet with parchment paper.

    In a bowl, combine sugar, syrup, and cayenne. Lay bacon out on parchment paper and brush with sugar mixture, evenly coating both sides of each strip.

    Bake bacon for 15-20 minutes, turning over half way through.

    Let cool on a wire rack.

Crispy Duck Breast

    Use 1-2 duck breast - Score skin in 1/4" intervals, being careful not to cut into the meat. Rotate breast and score again, making a crisscross pattern. Sprinkle with salt and pepper, to taste.

    Start with a cool pan. Place duck skin side down in sauté pan, then turn to medium-low Heat. Cover and cook for 10-12 minutes to render fat.

    Transfer duck to a metal baking sheet, skin side up. Place duck in oven (it can be put in with the bacon at 375 degrees F) for 10 minutes. Cook until the internal temperature reaches 165 degrees F.

    Allow to rest for 2 minutes.

Duck Cracklings

    Slowly remove the skin off 1-2 duck breast with a knife. Save remaining skinless duck breast for later use OR use trimmed skin from crispy duck breast

    Slice duck skin into 1/4 inch strips.

    Season with salt and pepper. Place on a baking sheet or sauté pan.

    Bake at 375 degrees for about 15 minutes OR sauté in pan for appx. 5-10 minutes while turning

Duck Liver Mousse (Optional)

    Combine Duck Livers, blue cheese crumbles, garlic cloves, salt & pepper to taste, and olive oil in food processor.

    Blend until smooth. Serve with bread or crackers.

Assemble Charcuterie Board

  • 1

    Thinly slice duck breast and fan it out in the center of your board.

  • 2

    Cut the Candied Duck Bacon slices in half and place in a pile on the board.

    Place the duck cracklings in a small bowl or directly on the board.

  • 4

    Place the duck liver mousse in a small bowl with a knife and serve with your favorite bread or crackers.

    Add your favorite cheeses and jams to the board - we recommend smoked gouda, blue cheese, or brie for cheese pairings. For jam, we recommend Apricot or raspberry jam.

    Pairs excellently with Pinot Nior or your favorite red blend.
