I use a refrigerated sugar cookie dough, it just makes it easier! and we all love easy recipes, dont we?!

When making this for a crowd, always make extra! Seriously, this is going to go FAST… You’ll be lucky if you get any for yourself! lol I used 2 packages of refrigerated cookie dough and a 16″ pizza pan when I make it for a crowd or party then I doubled the cream cheese frosting. My last get together, 9 people devoured the whole doubled recipe!! I couldn’t believe it. Definitely thought I was making to much lol! …NEVER?!
NOTE: The cookie dough spreads out in the pan so don’t roll all the way to edge. It will spread there on its own.

I always use fresh fruit! Its so important for the proper consistency and fresh flavor throughout the pizza. This past 4th of July, I made it into a rectangle shaped sugar cookie crust and decorated it like a flag! I used strawberries and blueberries. It was the talk of the BBQ, I was so proud as I watched everyone devour it!

IMPORTANT NOTE:

You might be wondering if you could make these a few hours ahead of time? but if you want the fruit not to bleed, its always best to top the pizza with the fruit, right before serving.

You can even make ‘cookie’ versions of the fruit pizza! Those are also fun and delicious for bite sized eating! Either way, its a crowd pleaser and is sure to be a hit anywhere you serve it!

Always allow the sugar cookie crust to cool completely before you spread on the cream cheese layer.
You can however, bake the crust ahead of time, but you must wait to add the cream cheese and your fruit until a few hours before you serve it. This keeps the pizza from getting soggy/floppy. If you want to, you can prepare the cream cheese topping ahead of time as well, you could either spread it on the cooled crust immediately, or store it in the fridge until the next day and then add the fruit toppings, then serve.
I have also laid out my cut fruit toppings in a single layer on top of some paper towels, this absorbs extra moisture before you arrange the fruit over the cream cheese layer.

The great thing about fruit pizza is how easy it is to change up the fruit toppings and customize with your favorites!

Fruit Pizza on a Sugar Cookie Crust

Ingredients

For the Crust:

  • 1/2 cup 1 stick butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp. kosher salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. cornstarch

For the Toppings:

  • 1 8 oz. package cream cheese, softened
  • 1/4 cup 1/2 stick butter, softened
  • 2 cups powdered sugar sifted
  • 1 1/2 tbsp. heavy cream
  • 1 tsp. pure vanilla extract
  • hulled and sliced fresh strawberries
  • peeled and sliced fresh kiwi
  • fresh blueberries
  • canned mandarin oranges
  • peeled and sliced ripe bananas tossed with a splash of lemon juice to prevent browning
  • halved fresh red grapes

Instructions

  • In the bowl of a stand mixer, beat butter until smooth, about 1-2 minutes.

  • Add sugar and beat again until fluffy, about 3-4 minutes, then add egg and vanilla extract and beat to combine.

  • Combine flour, salt, baking soda, baking powder, and cornstarch in a medium bowl and whisk to combine.

  • Gradually beat the dry mixture into the stand mixer on low speed until combine.

  • Tightly wrap cookie dough with plastic wrap and place in the fridge to chill for 30 minutes.

  • Preheat oven to 350 and spray a pizza pan with baking spray.

  • Take the plastic wrap off of the dough and place onto the prepared pizza pan.

  • Press dough into a flat disk about 3/4 - 1 inch in thickness and bake for 18 minutes.

  • Remove pan from the oven and let crust cool on the pan for 20 minutes.

  • Place the cooled pan into the fridge until cooled completely, about 30 minutes to 1 hour.

  • To prepare the frosting, beat together cream cheese and butter in the bowl of a stand mixer until light and creamy.

  • Add sifted powdered sugar and 1 tbsp. heavy cream and beat for 2-3 minutes, until combined. Add vanilla extract and remaining 1/2 tbsp. heavy cream if frosting is too thick and beat until frosting is light and fluffy.

  • Use an offset spatula to spread cream cheese frosting into an even layer onto the cooled crust. Add fruit in circular layers around the pizza and serve.

    I made this recently for a bridal tea party – it was a huge hit. I highly recommend you making this. The only thing is use a pizza pan that does not have steam holes. I had sugar cookie droplets on my oven floor ….. lol. thank you for this great recipe.
