That wasn’t so bad was it? Ash Wednesday?? Well, to be honest, it was a tough day for me. For many reasons. This move to the west is our life right now. What I am finding, is that keeping an open mind and a confident spirit will get me through this. Jason and I have, this whole time of two years since this idea conceptualized, prayed for guidance, listened to all of what is brought into our realm, and never tried to push a square peg through a round hole (so to speak). The market….ah, the housing market, is not a very ‘kind’ thing right now. We know how much we have into the house, and we know how much work we have done. To say the market is unfriendly, is quite certainly, an understatement. Short sales/foreclosures surely don’t help, but our home is unique. I don’t mean that with a sentimentality to this place. I mean it as you don’t find farmhouses, in this condition, with the amenities, the charm, the gardens, the acreage, the close-to-town, yet private. You just don’t. It took us awhile to find this home too. With that being said, we are praying for the peace and as many wise people have said ‘ do not worry ‘. To make my life harder, but of course, I have vowed to give certain things up during Lent that didn’t make yesterday go smoothly. Someone once tried to explain to me that during Lent the Lord doesn’t want us to suffer. I totally agree, however, I could not give up this opportunity to finally get serious about sacrifice and do ‘my all’, and even at that, those piddly things I gave up are not even touching the surface of what many saints and other valiant people of faith have endured.

Giving up gluten over a month ago now has definitely helped make me give up other things of similar idea. I don’t plan on divulging what I have given up. It is private. I do plan on sharing some recipes to help you through this Lent with meatless meal ideas, as well as some with meat.{gluten free} wonton wrappers – Day 2 of Lent – (1)

Take these Gluten Free Wonton Wrappers. I didn’t even know you could make them yourself, let alone gluten free. They were a hit and super easy. Kind of like making homemade biscuits really. I filled mine with a combination of quickly sauteed spinach, shredded white cheddar, sauteed mushrooms, and a dash of salt and pepper.

{GLUTEN FREE} Wonton Wrappers

{gluten free} wonton wrappers – Day 2 of Lent – (3)

Serves 10

Ingredients

  1. 1 cup all purpose gluten free flour
  2. 1/2 teaspoon xantham gum
  3. 2 eggs
  4. 4 tablespoons of warm water

Instructions

  1. 1. Combine flour and xantham gum. Add the eggs and 2 tablespoons of water, and beat together. Add enough water to create a smooth but stiff dough.
  2. 2. Knead the dough until smooth (can use hands or mixer using the paddle attachment)
  3. 3. Roll out dough onto floured surface until 1/8″ thick. Using a 2″ circle cutter, cut dough, taking remaining uncut dough together, re-rolling, and circle cut. (they will stick together if you stack them without first sprinkling each with a bit of flour).
  4. 4. Fill each circle with desired filling, moistening edges with water, and sealing with the tines of a fork.
  5. 5. After filling each one, heat a bit of olive oil in fry pan on medium heat. Fry each side 3 minutes. Keep those that are done in a 200degree F. oven while you cook the rest.

Notes

  1. This dough keeps well wrapped tightly in freezer. May be separated in 2 discs, and freeze one.

    They look yummy! Can’t wait to try making them. I just went gluten free about 3 weeks ago. And bought some all purpose gluten free flour for baking bread at Earth Fare. They will be a great option for meatless Fridays during Lent. Thank you for sharing. Love your blog!

    Good morning Anne Marie… I have been having fun catching up with you on some of your posts I missed… did you post somewhere where you are moving to?… I know you are headed for the mountains, just wondered where?… we live in the beautiful foothills of the Wasatch Mountains in Utah… you will love country life in the mountains!… also, I read about those awful pop up ads you are getting too… we got them but Jack got rid of them for me… when you install something new, or download something to your computer, it attaches itself… if you go to a site on google called malware.com they tell you how to uninstall those and get rid of them… so not nice for advertisers to do that to us!… love all of your recipes… I had no idea you could make your own won tons!… xoxo Julie Marie

    First of all yum! and the sale of your home must be bitter sweet, as for your beautiful feature in Country Style gardens it was a surprise to se you in the magazine but, not a surprise at all with your farm style beauty of it.

    We’re selling our house/ranch too. It’s in Colorado Springs, 40 acres and a pond, barn, garden areas and more. Very private, yet great neighbors nearby. CS has a very large homeschool community too! I hadn’t been on your blog in a few years, so I was surprised to hear you’re moving west. I don’t know if you’ve considered CS, but we’ve been very happy here. Our baby is graduating in May, and we’re downsizing.
