With pantry items limited, a reader wanted to know if she could freeze her ricotta cheese if she only used half to make cookies. I went to the expert, Mark Federico of Narragansett Creamery and Providence Specialty Products.

“Yes, you can freeze ricotta. Fresh mozzarella can be frozen as well. No need to freeze our feta and the hard cheeses such as Atwells Gold (our asiago), Cheddar, and Divine Providence (our Gouda).”

You can also freeze milk, eggs and butter.

To freeze milk, leave a little room in the container for expansion before putting it in the freezer.It’s best if you use it within the first month of freezing. Half & Halfcan also be stored in the freezer.Eggscan be stored for over a month in the freezer, but you have to remove them from the shells first. You can freeze a mix of the whipped eggs, or the whites and yolks separately.

Be sure to thaw all of these items in the refrigerator, use soon after thawing and don’t refreeze.

Butter can also be frozen. Secure tightly in freezer wrap or aluminum foil and then put in a freezer bag.
