An easy to make and easy on your budget Instant Pot chicken carnitas that are full of flavour, will fill you up and are great as leftovers too!

Prep Time10 minutes

Cook Time30 minutes

Total Time30 minutes

Ingredients

  • 2 lbs Boneless, Skinless Chicken Breast
  • 2 tablespoon Kosher Salt
  • 2 teaspoon Cracked Pepper
  • 1 tablespoon Dried Oregano
  • 2 teaspoon Cumin
  • 1 tablespoon Olive Oil
  • 1 White Onion, coarsely chopped
  • 2 Serrano Peppers, seeded and chopped
  • 4 Garlic Cloves, minced
  • 1 Whole Orange, quartered
  • Water, as needed
  • Cooking Spray

Instructions

Rinse and pat dry the chicken breast, then season with the salt and pepper, pressing the seasoning into the chicken. In a small dish, combine the oregano, cumin, and olive oil, then pat down into the chicken.

Place the chicken in the bottom of a 6-qt Instant Pot, then top with the onion, serrano peppers, and garlic. Squeeze the oranges over the chicken, then drop the rinds into the Instant Pot. If the orange is a little dry, add up to ¼ cup of water, so that the Instant Pot will seal properly.

Set the Instant Pot to MANUAL for 20 minutes, and once finished, allow to naturally release for 10 minutes before quick releasing.

Heat the broiler to high and place the rack towards the top of the oven. Gently shred the chicken inside the Instant Pot, then transfer to a sheet pan greased with cooking spray. Ladle some of the liquid over the chicken, then broil for 5-10 minutes, or until the chicken is brown and crisp. Serve in tortillas with your favorite garnishes and enjoy!

Notes

If you'd like to do these in the slow cooker instead cook chicken for 4 hours on medium or high depending on your slow cooker.

    • Sorry I haven't doubled it, you're going to have to experiment with that. As well as with any cooking times, it can vary depending on your slow cooker, instant pot, oven and more so always keep an eye on it.

FAQs

Does cooking chicken longer in Instant Pot make it more tender? ›

This dinner staple cooks up perfectly every time in the Instant Pot. You can aim for firm but juicy chicken for cubing, or let it cook a little bit longer for tender shredded chicken.

Why does my Instant Pot chicken taste rubbery? ›

If your boneless chicken breast winds up with a weird, rubbery texture, it probably means that you need to cook it longer. In general, the Instant Pot does better with longer cook times for meat.

What makes the chicken chewy in the Instant Pot? ›

If you used thinner pieces of chicken or did not adjust the cook time to the correct weight, it can result in dry and chewy chicken. You can salvage your chicken by serving it with a sauce to add moisture and flavor. How long does chicken need to be in the Instant Pot?

Is it better to pressure cook or slow cook chicken? ›

So can a Crock-Pot cook better chicken than an Instant Pot? Well, it really depends on what you're making. The Instant Pot cooks chicken much faster than its non-pressure counterparts, but the resulting texture isn't going to be the same as what you'd get with a slow cooker or Dutch oven.

What happens if you cook chicken too long in Instant Pot? ›

While all cuts of chicken are fair game for the Instant Pot, thighs are the most forgiving. Because chicken breast is so lean, just a couple of extra minutes of cook time turns them from juicy to overcooked and dry.

Why is my chicken breast tough in the slow cooker? ›

Aside from accidentally overcooking the meals, the most common reason we see for tough, rubbery, or overdone chicken is customers using a Crockpot that is far too big.

Why did my chicken burn in Instant Pot? ›

There are a number of reasons your Instant Pot will display its burn message. Most of these involve mishaps that may occur during the cooking process, like not adding enough liquid or forgetting to adjust the steam valve to the sealing position. Once you figure out what you've done wrong, correcting the error is easy.

Can I put undercooked chicken back in Instant Pot? ›

If desired, test chicken with a thermometer; it should reach 165 degrees. (If it's just shy, place the lid back on and allow it to rest for 5 minutes. If the chicken is still not cooked to at least 160 degrees, secure the instant pot lid and cook for 1-3 minutes longer, on high pressure.)

How do you keep chicken from getting tough in an Instant Pot? ›

Chicken can get a rubbery texture in the instant pot when over cooked. To avoid this, try not to over cook your chicken. Storing the chicken in chicken broth can help rehydrate the chicken and make it less rubbery.

Does chicken get more tender the longer you slow cook it? ›

That is why tough meats become “fork tender” in the slow cooker. Chicken breasts have very little connective tissue; that means they can be cooked quickly because the long cooking time needed to soften connective tissue isn't necessary. They also have little fat, which means they can become dry if cooked too long.

Can you overcook chicken in a pressure cooker? ›

I wouldn't cook chicken longer than 20 minutes at high pressure, or it could start to dry out, but don't worry if you forget about it for a few minutes after the pressure cooking cycle is complete.

Does chicken need to be submerged in Instant Pot? ›

Season the chicken breasts with salt and pepper or your choice of seasonings. Fill the Instant Pot with water up to the ½-full mark or enough water for the chicken to be completely submerged.

Why is my Instant Pot shredded chicken rubbery? ›

Why does chicken get rubbery in Instant Pot? The Instant Pot utilized pressure cooking, which is an ulrta quick cooking method. This makes it very easy to overcook chicken. Rubbery chicken is overcooked.

Why is my shredded chicken tough? ›

Overcooking might play a role in your chicken's tire-like texture. Leaving chicken in a pan, oven, or grill for just a little too long can suck the moisture right out and leave you with a dry, rubbery bird. Without moisture, the protein fibers in the chicken become elastic.

Does chicken get more tender the longer you cook it? ›

Unlike chicken breasts, chicken thighs and drumsticks actually become more tender the longer they cook. That's because of their makeup. Dark meat has an abundant amount of connective tissue, which dissolves into gelatin as the meat cooks, rendering it juicy and tender.

Can you overcook chicken in the Instapot? ›

Yes, it is possible to overcook chicken in an Instant Pot because you are unable to check the temperature of the chicken throughout the cooking time.

Does meat get softer the longer you pressure cook it? ›

The pressure will in fact make your meat super tender, almost as if you slow cooked it for the better part of a day. You still have to figure out how long to cook it though so for that I invite you to read a little further.

Why is my Instant Pot meat not tender? ›

If you find that it's still tough after cooking, you'll need to cook it for another 10 to 20 minutes at high pressure – it just needs a bit longer to continue to brine and break down the connective tissue.
