paleo breakfast muffins! (2024)

This is one of my all time favorite recipes and one of those things I make over and over again!

I like to make a stash of these muffins to have around for days when I’m in a rush in a morning or to pop in my bag in case of emergencies!
They have a cakey texture are delightfully light and sweet and can be dressed up with added frosting for events or as a pudding!
I think they make a great breakfast as they contain all the important things like protein, (from the eggs and nuts) fats (from the coconut oil) and a bit of fibre (from that banana)!

This recipe makes 8 muffins.

you will need…

120g ripe banana (1 should do it)
2 eggs
50ml coconut oil
100g almond flour
20g shredded unsweetened coconut
2 tbs honey
1 tsp baking powder

what to do…

1. Line a muffin tin with 8 cupcake cases and pop the oven on to 160 degrees C.

2. Mash the banana to within an inch of its life until you have a gooey mess…yum!

3. Add the eggs, the honey and the coconut oil (which I’ve hoped you’ve guessed needs to be melted!) and give it a ruddy good stir.

4. Now add the dry ingredients and mix until you’ve got no lumps!

5. Divide equally into the cases and bake for 18-20 minutes (ovens vary and I’m not dead technical so you’re on your own for this bit!)

The end result should be beautifully golden, nicely risen mouthfuls of joy!

Play around with this recipe and add blueberries, raisins, dark choc chips, whatever you fancy!

      it works out at roughly 1/4 cup of oil, 1 cup almond flour, 1/4 coconut

      1. Hi Stacy! Yeah almond flour is pretty high in calories because of the fat content, but I don’t see it as ‘bad fats’ so great for a treat 😉

  13. Can you store them in an airtight container or does it need to be in the refrigerator?
