We love it with hot bread or corn bread on the side.

Simple, with tomatoes, beans (actually, black-eyed peas), corn, and stock.

Add the beef or ground turkey.

And of course, the flavor of the soup is all in the seasoning, right? What do you have in your cupboard?

So we added fresh Parmesan that I had in the fridge, with fresh basil from the Trader Joe’s.

Serve with Best Lemon Sunshine Squares Recipe for dessert.

I’d say the perfect, light but hearty meal!

Organizing and cleaning the pantry

I also think back to one of my birthday gifts years ago, a gift to help me organize and clean out my pantry. Only a sister would take the time to do this, right? Hee hee. I have the best sisters!

Since I actually did clean through my pantry this week, I whipped up a healthy vegetable soup, made mostly with what was in my pantry!

Oh my goodness, I live on Willamette Ave, just down the street from Fortune Drive— it’s part of our regular neighborhood walking route. You’re one of my favorite food blogs— I had no idea you were so local!

This looks so delicious! I make meals all the time like this when we haven’t had time to make it to the store in a couple weeks. We tend to have what I call tortilla soup, which is literally anything I find in the cabinet with a tomato based soup! But it’s always delicious! Thanks for sharing!

Love this kind of soup, getting creative with what’s in the pantry and fridge floats my boat! :)

Also love the sweet pic of you and your sisters as kids and as adults… all three of you are beautiful!! (are you in the same order in both pics, in other words who’s who, just curious! :) My only sister passed away suddenly fourteen years ago, and I miss her and that special relationship sooo much!! :( But the Lord has been good to send me many great women friends through the years who are like sisters to me! (We gals can’t live this life without our sistas by our side!! :)
    Blessings to you! chris

Hi, Chris. Yes, we are in the same order (I didn’t even notice). :) I agree, there’s also nothing quite like great women friends who are like sisters! xo
