I've made a massive thai chicken and veg green curry expecting to eat it tonight with friends but plans have now changed, we're all going out (I don't mind the change of plans) so I'll need to eat the curry up myself over the next few days. How long will it keep ok in the fridge? It's cooked and cooling and will be refrigerated shortly but first meal from it will be tomorrow. There is no rice to consider, I'll cook that fresh tomorrow.
How many days in the fridge would you feel is ok? It also has some tofu in, if that's relevant (don't think so, but still)

Could you keep some in the fridge for using in the next 2-3 days and freeze the rest

Fresh, it'll be fine for about 3-4 days, but I'd probably get bored eating the same thing for four days, so I'd portion it out and freeze the rest.

I could, but I don't think it'll freeze well due to the kind of veg thats in it. I'd prefer to keep it in the fridge and use over the next few days if that is possible. It looks like it would make four meals...might get a bit sick of it I suppose.

I presume it was made with coconut milk? The high fat content should preserve it. I’d keep it about 4 days, it’ll be fine. But it freezes well.

What sort of veg? I put all different sorts in mine and it comes out fine after being frozen. Just don’t reheat it any more than you need to.

Yes, made with coconut milk but the dried stuff that you reconstitute, not the canned kind

These sorts of websites are full of sh*te and just want you to click so they get paid for the adverts. They all say different things, this one states 1 week:

Coconut milk is fine in the fridge for a good few days. It’s very obvious if it’s bad because it develops a layer of green mould.
