I am staying at my in laws and have offered to cook for us all next week.

I am not a confident cook and I really don't want to screw this up.

I am thinking perhaps some kind of tray bake/ pie. Not lasagne or fish pie as MIL is already cooking those on other days.

Please send ideas for simple but really tasty family dinner ideas

If it's someone else's home I would try and keep it simple. Something like Roast Chicken, Salad and new potatoes.

What do you normally cook at home, if you do meals from scratch?

I'd say it doesn't matter it is really simple. Baked potatoes with some kind of filling and salad. Sausage and mash. Macaroni cheese.

Better than attempting something you don't normally do, but getting it wrong out of nerves.

Totally agree n sticking to what you know and doing that well.
I don't think it matters if it's simple, I'd rather simple and delicious than a complex experiment that ends in disaster!
Where possible use seasonal high quality ingredients and you will be half way there.
A tray bake is a good idea, Spanish chicken with chorizo, red onions, peppers and potatoes always goes down well here.
Or a sausage casserole, chicken, bacon and leek pie or cod wrapped in pancetta with red pesto.

The Rukmini Iyer roasting tin recipes are very straightforward and you'll be able to find some online.
I'd also be thinking about shepherd's pie, or toad in the hole.
